THE NOTABLE NUTRITION APPROACH

Welcome! I am so glad you are here. I am Shelby, the founder and dietitian at Notable Nutrition. My goal here is to be a reliable, evidence-based source of nutrition information and counseling. I want to teach those I work with sustainable and safe nutrition practices to achieve their best quality of life. Our bodies and minds deserve to be nourished and honored and I can’t wait to help you with that. 

 

Background

My passion for nutrition started early in life. My parents included me in menu planning, grocery shopping and cooking. They served nourishing meals and maintained a neutrality around foods at the table, not associating them with “good” or “bad”. I was able to witness the beauty of my grandparents and my great grandparents preparing foods from scratch to serve their families, often harvesting ingredients from their backyard. This fostered a respect for both the joy of food and the nutrition it provides. 

 

In high school, I started running, both cross country and half marathons. Consequently , I began to recognize the role nutrition plays in performance. This was a pivotal time to learn the balance between the power of food and maintenance of a healthy relationship with food. Around this time, my dad’s health began to decline as a result of a genetic condition that impacts respiratory function. It was at that time that I began to recognize the gift of life and the importance of honoring a lifestyle that will maintain the best quality of life possible; with nutrition, sleep, movement, and connection. 

 

After graduation, I set off to pursue a degree in Dietetics and Biomedical Science from Missouri State University. There, I had the opportunity to learn in a variety of settings that set the foundation for my career as a dietitian, connecting the love of food and science. My curriculum included a variety of courses including human anatomy, physiology, biochemistry, organic chemistry, microbiology, genetics, medical nutrition therapy, counseling, psychology, food science, sports nutrition, world culture and more.  I volunteered with the American Heart Association, food pantries, and local organizations to learn more about community nutrition and worked as a dietitian assistant in the hospital, acute care setting. 

 

Post-graduation, I completed my Dietetic Internship at the University of Iowa Hospitals and Clinics, clocking 1200+ hours of supervised practice in the acute care setting: nutrition support (IV nutrition and tube feeding), surgical and medical intensive care, pulmonology, oncology, transplant, gastrointestinal surgery, pediatric acute care, neonatal intensive care, and pediatric oncology. I learned during this time the extensive role that nutrition can play in healing, recovery, and health. In 2018, following completion of this program, I became Shelby Olson, RD, LD. 

 

Since becoming a dietitian, I have completed my Master’s of Science in Nutrition from the University of Kansas Medical Center and became a Certified Nutrition Support Clinician. Most recently I became a Registered Dietitian- Advanced  Practitioner so that I could better serve those I work with. I have worked in a variety of settings, from pediatric to adult, and from outpatient to critical care. I have a passion and appreciation for all these areas. Nutrition is such a powerful tool and I love getting to share that with others.
